Avocado is an excellent source of potassium, vitamin E, B vitamins, and fibre. They are also a great source of healthy fat!

Prep Time

10 Minutes

Serves 6

Ingredients:

2 large tomatoes diced

1 cucumber sliced and quartered

2 avocados diced

1 small red onion dice

2 tbsp. fresh cilantro chopped (coriander)

2 whole limes (fresh lime juice)

1 tbsp extra virgin olive oil

1 pinch salt (to taste)

Method:

Chop tomatoes and cucumber, peel and dice avocados and red onion, and wash and chop cilantro.

Combine the tomatoes, cucumber, avocados, red onion, and cilantro in a serving bowl.

Squeeze lime juice over the top and drizzle with extra virgin olive oil. Gently toss.

Taste and add salt as needed.

Additional Notes:

To enhance the flavours of this salad, you could consider adding some olives, crumbled feta cheese or a sprinkle of toasted pine nuts for a savoury twist. Additionally, a drizzle of balsamic glaze can add a sweet and tangy note to the salad. If you enjoy a bit of heat, consider adding a dash of red pepper flakes for a spicy kick. Freezing Notes:

Not recommended for freezing.

Leftovers will keep for up to 3 days in an airtight container in the refrigerator. It will keep longer if the vegetables are kept separate until required.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
