Superfood Granola with Goji Berries

Serves 5 - 6

Ingredients:

3 cups gluten-free rolled oats

1/2 cup sliced almonds

3 tbsps. chia seeds

1/2 cup goji berries

3/4 cup coconut palm sugar

1/4 cup melted coconut oil

2 tbsps. cinnamon

2 tsps. salt

Method:

Preheat the oven to 150°C / 130° Fan / 300°F / Gas Mark 2.

In a large bowl, combine all the ingredients except for the goji berries and mix them thoroughly.

Spread the mixture in an even, 1/2-inch layer on a baking sheet and transfer it to the oven.

Bake for 15 minutes, then stir the mixture, and return to the oven for 10 minutes. Repeat this process every 10 minutes until the granola turns golden brown.

Remove the mixture from the oven and stir in the goji berries.

Allow the granola to cool down for 15 minutes before storing it in a large glass jar.

Additional Notes:

Add some nuts that you love for the extra crunch!

You can serve the granola with coconut milk or yogurt and fresh fruit.

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
