Spicy Roasted Chickpeas
I recently discovered a delicious and healthy snack that I just can't get enough of - spicy roasted chickpeas! These little gems are packed full of protein and fiber, making them a great option for a midday pick-me-up or as a guilt-free snack to munch on throughout the day.
To make spicy roasted chickpeas, start by draining and rinsing a can of chickpeas and then patting them dry with a paper towel. Next, toss the chickpeas in seasonings of your choice (such as a mixture of olive oil, chili powder, cumin, garlic powder, and a pinch of salt). Spread the chickpeas out on a baking sheet and roast in the oven until they are crispy and golden brown.
The result is a crunchy and flavourful snack that is perfect for satisfying your cravings for something salty and spicy. I love to pack a small bag of spicy roasted chickpeas in my lunchbox to enjoy throughout the day, or to serve them as an appetiser at parties. Spicy Roasted Chickpeas is a great snack which is also fantastic as a topping on salads and soups. I keep them in the house in a glass container and often I will find the children stealing handfuls of them when they want a snack.
Ingredients:
400 g tin of drained and rinsed chickpeas
2 tbsp. olive oil
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. cayenne pepper
1/2 tsp. smoky turmeric
1 tsp sea salt
Method:
Preheat the oven to 160°C / 140° Fan / 320°F / Gas Mark 2 1/2.
Dry the chickpeas thoroughly. I use kitchen paper for this.
Mix the oil and spices in a bowl. Add the chickpeas and continue to mix until evenly coated.
Place on a lined baking sheet.
Spread them out evenly and bake for around 1 hour until they are crisp. I shake them several times throughout cooking.
Leave to cool before serving.
Store any you don’t eat in an airtight storage container for up to 2 weeks!

Change the spices or add herbs. Make this dish uniquely yours!
